- 4 cups vegetable broth
- 1 cup heavy cream
- 2 cloves garlic, minced

- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
Instructions
- In a large pot, heat the olive oil over medium heat until shimmering.
- Add the chopped onions, carrots, and celery. Sauté for about 5 minutes until the onions are translucent.
- Stir in the minced garlic, thyme, and basil. Cook for an additional minute until fragrant.
- Add the diced potatoes and vegetable broth, bringing the mixture to a boil.
- Reduce heat to low, cover, and simmer for 15-20 minutes, or until the potatoes are tender.
- Stir in the frozen peas and heavy cream, cooking for another 5 minutes until heated through.
- Season with salt, pepper, and lemon juice to taste before serving.
