- 1 tablespoon olive oil
- 1 pound ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 tablespoon Worcestershire sauce
- 4 cups beef broth
- 2 cups milk
- 8 ounces elbow macaroni
- 2 cups shredded cheddar cheese
- 1 can (14 ounces) diced tomatoes, drained
- 1 tablespoon tomato paste
- 1 cup frozen or fresh corn kernels
- 1/4 cup chopped fresh parsley or chives, for garnish
Instructions
- In a large pot over medium heat, pour in the olive oil and let it warm up.
- Add the ground beef to the pot. Cook until it is browned, using a spoon to break it up as it cooks.
- Once the beef is browned, add the diced onion and minced garlic. Cook for about 3 minutes, until the onion becomes translucent.
- Season the beef and onion mixture with salt, black pepper, and smoked paprika. Stir well to make sure the spices coat everything evenly.
- Pour in the Worcestershire sauce. Stir well to combine all the ingredients.
- Next, add the beef broth and milk to the pot. Bring the mixture to a gentle boil.
- Add the elbow macaroni. Cook according to the package instructions until the pasta is al dente, stirring occasionally.
- Once done, reduce the heat to low. Stir in the shredded cheddar cheese until it has fully melted, making the soup creamy.
- Mix in the diced tomatoes, tomato paste, and corn kernels. Allow everything to heat through for 2-3 minutes.
- Taste the soup and adjust the seasoning if needed. Once satisfied, remove it from heat.
- Serve hot, garnished with chopped fresh parsley or chives for added flavor and color.
Notes
Allow leftovers to cool before storing in an airtight container. It will last up to 3 days in the refrigerator or 2-3 months in the freezer.
