Description

A hearty and comforting one-pot soup that combines the flavors of cheeseburgers with macaroni, perfect for busy households.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 tablespoon Worcestershire sauce
  • 4 cups beef broth
  • 2 cups milk
  • 8 ounces elbow macaroni
  • 2 cups shredded cheddar cheese
  • 1 can (14 ounces) diced tomatoes, drained
  • 1 tablespoon tomato paste
  • 1 cup frozen or fresh corn kernels
  • 1/4 cup chopped fresh parsley or chives, for garnish

Instructions

  1. In a large pot over medium heat, pour in the olive oil and let it warm up.
  2. Add the ground beef to the pot. Cook until it is browned, using a spoon to break it up as it cooks.
  3. Once the beef is browned, add the diced onion and minced garlic. Cook for about 3 minutes, until the onion becomes translucent.
  4. Season the beef and onion mixture with salt, black pepper, and smoked paprika. Stir well to make sure the spices coat everything evenly.
  5. Pour in the Worcestershire sauce. Stir well to combine all the ingredients.
  6. Next, add the beef broth and milk to the pot. Bring the mixture to a gentle boil.
  7. Add the elbow macaroni. Cook according to the package instructions until the pasta is al dente, stirring occasionally.
  8. Once done, reduce the heat to low. Stir in the shredded cheddar cheese until it has fully melted, making the soup creamy.
  9. Mix in the diced tomatoes, tomato paste, and corn kernels. Allow everything to heat through for 2-3 minutes.
  10. Taste the soup and adjust the seasoning if needed. Once satisfied, remove it from heat.
  11. Serve hot, garnished with chopped fresh parsley or chives for added flavor and color.

Notes

Allow leftovers to cool before storing in an airtight container. It will last up to 3 days in the refrigerator or 2-3 months in the freezer.
