- 4 cups fresh broccoli florets
- 1 small onion, chopped
- 2 cups vegetable or chicken broth
- 1 cup milk or cream
- 1 tablespoon butter or olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Optional: shredded cheese for topping
Instructions
- In a large pot, heat the butter or olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the fresh broccoli florets and sauté for another few minutes.
- Pour in the vegetable or chicken broth and bring to a boil.
- Reduce heat and let it simmer until the broccoli is tender, about 10-15 minutes.
- Use an immersion blender to puree the soup until smooth, or transfer to a blender and blend in batches.
- Stir in the milk or cream and garlic powder, and season with salt and pepper to taste.
- Heat through and serve hot, optionally topped with shredded cheese.
Notes
Don’t overcook the broccoli for best texture and color. Adjust seasoning gradually to taste.
