Description

A warm, healthy, and satisfying soup made with fresh broccoli, onions, and creamy goodness, perfect for chilly nights.


Ingredients

Scale
  • 4 cups fresh broccoli florets
  • 1 small onion, chopped
  • 2 cups vegetable or chicken broth
  • 1 cup milk or cream
  • 1 tablespoon butter or olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: shredded cheese for topping

Instructions

  1. In a large pot, heat the butter or olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the fresh broccoli florets and sauté for another few minutes.
  3. Pour in the vegetable or chicken broth and bring to a boil.
  4. Reduce heat and let it simmer until the broccoli is tender, about 10-15 minutes.
  5. Use an immersion blender to puree the soup until smooth, or transfer to a blender and blend in batches.
  6. Stir in the milk or cream and garlic powder, and season with salt and pepper to taste.
  7. Heat through and serve hot, optionally topped with shredded cheese.

Notes

Don’t overcook the broccoli for best texture and color. Adjust seasoning gradually to taste.
