Ingredients

  • 1 lb sausage (Italian or smoked), sliced into rounds
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • Salt, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add sausage rounds and brown for 4–5 minutes. Remove and set aside.
  2. In the same skillet, sauté onion and bell pepper for 3–4 minutes until they soften. Stir in minced garlic and cook for another 30 seconds.
  3. Sprinkle in smoked paprika and black pepper. Stir in the uncooked rice and toast it for 1–2 minutes.
  4. Pour in chicken broth and BBQ sauce. Stir well to coat the rice and return the browned sausage to the pan.
  5. Bring the mixture to a boil, then cover the skillet and reduce heat to low. Simmer for 20–22 minutes.
  6. After cooking, let the dish rest for 5 minutes, fluff the rice, garnish with parsley, and serve warm.

Notes

For added freshness, serve with a green salad or steamed vegetables. This dish can be customized with different sausages or grains to suit your taste.
