- 1 lb sausage (Italian or smoked), sliced into rounds
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1/2 cup BBQ sauce
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- Salt, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat olive oil over medium heat. Add sausage rounds and brown for 4–5 minutes. Remove and set aside.
- In the same skillet, sauté onion and bell pepper for 3–4 minutes until they soften. Stir in minced garlic and cook for another 30 seconds.
- Sprinkle in smoked paprika and black pepper. Stir in the uncooked rice and toast it for 1–2 minutes.
- Pour in chicken broth and BBQ sauce. Stir well to coat the rice and return the browned sausage to the pan.
- Bring the mixture to a boil, then cover the skillet and reduce heat to low. Simmer for 20–22 minutes.
- After cooking, let the dish rest for 5 minutes, fluff the rice, garnish with parsley, and serve warm.
Notes
For added freshness, serve with a green salad or steamed vegetables. This dish can be customized with different sausages or grains to suit your taste.
