- 1 pound Kielbasa
- 3 tablespoons Honey
- 3 cloves Garlic
- 2 tablespoons Soy Sauce
- 2 cups Bell Peppers (red & yellow)
- 1 cup Baby Carrots
- 2 cups Baby Potatoes
- 2 tablespoons Olive Oil
- 1/4 cup Fresh Parsley or Green Onions
Instructions
- Begin by preparing your ingredients. Slice the kielbasa into bite-sized pieces. Chop the bell peppers into strips and slice the baby potatoes in half. If using regular carrots, cut them into small rounds.
- In a large mixing bowl, combine the honey, minced garlic, and soy sauce. Stir well to make a smooth sauce.
- Heat the olive oil in a large skillet over medium heat. Once hot, add the kielbasa pieces. Sauté for about 3-4 minutes until they start to brown.
- Add the bell peppers and baby carrots to the skillet. Stir everything together and allow the vegetables to cook for about 5 minutes.
- Now add the baby potatoes to the mix, then pour the honey-garlic sauce over the entire dish. Stir to ensure everything is well coated.
- Cover the skillet with a lid and let it simmer on medium-low heat for about 15-20 minutes, stirring occasionally. Check the potatoes; they should be fork-tender when done.
- Once cooked, remove the lid and let it simmer for an extra 2-3 minutes to thicken the sauce slightly.
- Finally, remove from heat and sprinkle freshly chopped parsley or green onions on top. Serve warm and enjoy your delightful meal!
Notes
Serve with rice, quinoa, or crusty bread. Store leftovers in an airtight container in the refrigerator for up to 3 days.
