- 4 medium potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and minced garlic, and sauté until softened (about 3-4 minutes).
- Introduce the ground beef and cook until browned, breaking apart as it cooks. Drain any excess fat.
- Stir in the diced potatoes, beef broth, salt, pepper, paprika, and Italian seasoning.
- Bring to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes until the potatoes are tender.
- Uncover, stir occasionally, and let excess liquid evaporate if needed.
- Adjust seasoning to taste and garnish with fresh parsley if desired.
- Serve hot.
