Ingredients

  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until softened (about 3-4 minutes).
  3. Introduce the ground beef and cook until browned, breaking apart as it cooks. Drain any excess fat.
  4. Stir in the diced potatoes, beef broth, salt, pepper, paprika, and Italian seasoning.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes until the potatoes are tender.
  6. Uncover, stir occasionally, and let excess liquid evaporate if needed.
  7. Adjust seasoning to taste and garnish with fresh parsley if desired.
  8. Serve hot.
