Description

A classic and comforting potato salad with tender potatoes, hard-boiled eggs, and creamy dressing, perfect for any gathering.

Ingredients

Scale
  • 2 pounds potatoes
  • 4 hard-boiled eggs
  • 1 cup mayonnaise
  • 2 tablespoons mustard
  • 1 tablespoon apple cider vinegar
  • 1/2 cup celery, chopped
  • 1/4 cup onion, finely chopped
  • Salt and pepper to taste
  • Paprika for garnish

Instructions

  1. Boil the potatoes in salted water until they are tender, about 15-20 minutes. Once cooked, let them cool, then peel and cut them into cubes.
  2. Combine the mayonnaise, mustard, apple cider vinegar, salt, and pepper in a large mixing bowl to make the dressing.
  3. Add cubed potatoes, chopped hard-boiled eggs, celery, and onion to the bowl. Mix gently until well combined, being careful not to mash the potatoes.
  4. Cover the bowl with plastic wrap and chill in the refrigerator for at least one hour before serving.
  5. Sprinkle paprika on top for garnish before serving.

Notes

Use fresh ingredients for the best texture. Avoid overcooking the potatoes to keep them firm.
