- 2 pounds potatoes
- 4 hard-boiled eggs
- 1 cup mayonnaise
- 2 tablespoons mustard
- 1 tablespoon apple cider vinegar
- 1/2 cup celery, chopped
- 1/4 cup onion, finely chopped
- Salt and pepper to taste
- Paprika for garnish
Instructions
- Boil the potatoes in salted water until they are tender, about 15-20 minutes. Once cooked, let them cool, then peel and cut them into cubes.
- Combine the mayonnaise, mustard, apple cider vinegar, salt, and pepper in a large mixing bowl to make the dressing.
- Add cubed potatoes, chopped hard-boiled eggs, celery, and onion to the bowl. Mix gently until well combined, being careful not to mash the potatoes.
- Cover the bowl with plastic wrap and chill in the refrigerator for at least one hour before serving.
- Sprinkle paprika on top for garnish before serving.
