- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 cups elbow pasta
- 1 can (14.5 oz) diced tomatoes
- 2 cups beef broth
- 2 tbsp tomato paste
- 1 tsp paprika
- Salt and pepper, to taste
- 1 cup shredded cheese (optional)
Instructions
- In a large pot, brown the ground beef over medium heat. Ensure it is well-cooked, and any excess grease is drained off.
- Add the chopped onion, minced garlic, and bell pepper to the pot. Cook until they are softened, about 5 minutes.
- Stir in the diced tomatoes, beef broth, tomato paste, paprika, salt, and pepper. Mix well and bring the mixture to a boil.
- Once boiling, add the elbow pasta to the pot. Stir to combine.
- Reduce the heat and let it simmer for about 15-20 minutes, or until the pasta is tender.
- If desired, sprinkle with shredded cheese before serving. Enjoy your warm and comforting goulash!
