- 2½ cups granulated sugar
- ½ cup light corn syrup
- ½ cup water
- 2 large egg whites
- 1 teaspoon vanilla extract
- ½ to 1 cup chopped pecans
- Pinch of salt
Instructions
- In a heavy saucepan, combine sugar, corn syrup, and water. Cook over medium heat, stirring until the sugar completely dissolves.
- Continue boiling the mixture (without stirring) until it reaches 260°F, which is the hard-ball stage on a candy thermometer.
- While the syrup is cooking, in a stand mixer, beat the egg whites and salt on high until stiff peaks form.
- Once the syrup reaches the right temperature, slowly pour it into the beaten egg whites while mixing on high for about 6-8 minutes until the mixture holds its shape and looks glossy.
- Add vanilla and fold in the pecans gently to combine.
- Quickly drop spoonfuls of the mixture onto waxed paper. Allow it to cool completely before storing.

Store in an airtight container at room temperature for the best flavor and texture. Use parchment or wax paper between layers to prevent sticking.
