- 1 tablespoon Dijon mustard
- 1 cup sour cream
- 2 tablespoons all-purpose flour (or gluten-free flour for gluten-free option)
- 2 tablespoons butter (or olive oil for dairy-free option)
- 1 tablespoon olive oil
- Salt and freshly ground black pepper, to taste
Instructions
- Prepare the Beef: Cut the beef into thin strips against the grain. Season with salt and pepper, then lightly dredge with flour.
- Cook the Vegetables: In a large skillet, add butter and olive oil over medium heat. Add sliced mushrooms and onions, cooking until soft and golden brown.
- Sear the Beef: Push cooked vegetables to the sides and place beef strips in the center. Sear quickly until browned.
- Add Garlic and Broth: Stir in minced garlic until fragrant, then pour in beef broth and add Dijon mustard. Let simmer gently.
- Finish with Sour Cream: Remove from heat and stir in sour cream until smooth. Avoid boiling to prevent curdling.
- Serve: Serve immediately over buttered egg noodles, mashed potatoes, or steamed rice and garnish with parsley.
