Description

Delicious burritos filled with seasoned shrimp, guacamole, and fresh ingredients, offering a unique twist on traditional flavors.


Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 1 tbsp Old Bay seasoning
  • 1 tbsp Olive oil
  • 2 cloves Garlic, minced
  • 4 Large flour tortillas
  • 1 cup Guacamole
  • 1 cup Cooked rice
  • 1/4 cup Red onion, diced
  • 1 cup Shredded cheese (cheddar or Mexican blend)
  • 2 tbsp Fresh cilantro, chopped

Instructions

  1. Toss the shrimp with olive oil, Old Bay seasoning, and minced garlic in a bowl. Make sure every shrimp is coated well.
  2. Heat a skillet over medium-high heat. Add the shrimp and sear them for about 2 minutes on each side until they turn pink and golden.
  3. Warm the flour tortillas to make them pliable.
  4. Spread guacamole in the center of a warmed tortilla.
  5. Layer in a scoop of cooked rice, followed by the cooked shrimp, diced red onion, shredded cheese, and chopped cilantro.
  6. Fold in the sides of the tortilla, then roll it tightly from the bottom to form a burrito.
  7. Place the burrito seam-side down on a pan. Toast it until golden and slightly crisp.
  8. Remove from heat and slice in half. Garnish with extra cilantro and serve with salsa or lime wedges.

Notes

Don’t overcook the shrimp and always warm the tortillas before filling them for easy rolling.
