- 1 medium zucchini, grated
- 1 cup applesauce
- 1 cup rolled oats
- 1 cup all-purpose flour (or whole wheat flour)
- 1/2 cup brown sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
- 1/2 cup chopped nuts (optional)
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Grate the zucchini using a box grater or a food processor. Squeeze out excess moisture with a kitchen towel.
- Combine the grated zucchini, applesauce, and vanilla extract in a large bowl. Mix until well blended.
- Mix the rolled oats, flour, brown sugar, baking powder, baking soda, cinnamon, and salt in a separate bowl.
- Gradually add the dry ingredients to the wet ingredients and stir until just combined. Fold in the chocolate chips or nuts if using.
- Scoop dollops of dough onto the prepared baking sheet, spacing them a few inches apart.
- Bake for about 12-15 minutes, or until edges are lightly golden.
- Cool the cookies on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Ensure to squeeze out excess moisture from the zucchini to keep cookies from becoming too moist. Modify add-ins as per taste.
