Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, and salt until well combined.
- In a separate bowl, beat the softened butter and granulated sugar together until light and fluffy (about 3-4 minutes).
- Add the large egg, buttermilk, red food coloring, and vanilla extract to the butter and sugar mixture. Beat until well incorporated.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Gently fold in mini chocolate chips with a spatula.
- Scoop out dough with a tablespoon and drop onto the prepared baking sheet, leaving space for spreading.
- Bake for 10-12 minutes, or until edges are crispy and centers are soft.
- Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
