Description

A creamy and flavorful appetizer dip made with non-alcoholic beer and beef bacon, perfect for game day or movie night.


Ingredients

  • 3 pieces beef bacon, diced
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup non-alcoholic lager beer
  • ½ cup whole milk
  • 2 cups shredded white cheddar cheese
  • 1 cup shredded sharp yellow cheddar
  • 4 ounces cream cheese
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 tablespoon freshly chopped chives
  • Soft pretzels or pretzel bites, for serving
  • Kielbasa sausage, grilled and sliced, for serving

Instructions

  1. Cook the diced beef bacon in a cold saucepan over medium-low heat for 8-10 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
  2. Add 2 tablespoons unsalted butter to the pan with the bacon fat, melt it, and whisk in 2 tablespoons flour to make a roux. Cook for 1-2 minutes.
  3. Gradually whisk in 1 cup non-alcoholic lager beer and let simmer for 2-3 minutes until thickened. Stir in ½ cup whole milk until smooth.
  4. Reduce heat to low and add 4 ounces of cream cheese until melted, then add 2 cups shredded white cheddar and 1 cup shredded sharp yellow cheddar, stirring until smooth.
  5. Add 1 tablespoon Dijon mustard, 1 tablespoon Worcestershire sauce, ½ teaspoon onion powder, and ½ teaspoon garlic powder. Mix well.
  6. Stir in half of the crispy beef bacon and warm for another 1-2 minutes. Transfer to a serving dish, garnish with remaining bacon and chives, and serve with soft pretzels and kielbasa sausage.

Notes

Store leftovers in an airtight container in the fridge for 3-5 days. Reheat gently on low heat and add a splash of milk if necessary.
