Instructions
- In a mixing bowl, combine the mascarpone cheese, crushed graham crackers, powdered sugar, cooled espresso, vanilla extract, and a pinch of salt. Stir until well combined.
- Use your hands to form the mixture into small balls, about 1 inch in diameter.
- Roll each truffle in cocoa powder to coat.
- Place the truffles on a baking sheet lined with parchment paper.
- Refrigerate for at least 20 minutes before serving.
