Delightful Rocky Road Chocolate Treats combining chocolate, marshmallows, nuts, and coconut for a fun and easy dessert.
Ingredients

- 8 ounces (1 1/3 cups) dark chocolate melts or chips
- 8 ounces (1 1/3 cups) milk chocolate melts, chips, or block, chopped
- 2 tablespoons coconut oil or neutral flavored oil
- 3 cups pink and white marshmallows, most cut in half
- 3/4 cup raspberry lollies, halved
- 1/3 cup unsweetened desiccated coconut
- 1/2 cup unsalted peanuts, very roughly chopped
Instructions
- Line an 8-inch square pan with parchment paper, leaving some overhang for easy removal.
- In a heatproof bowl, combine dark and milk chocolate with coconut oil. Microwave in 30-second intervals, stirring until smooth.
- Fold in marshmallows, raspberry lollies, desiccated coconut, and peanuts until evenly coated.
- Pour the mixture into the prepared pan and spread evenly with a spatula.
- Refrigerate for about 3 hours or until completely set.
- Remove from refrigerator 30 minutes before cutting. Lift out by the overhanging parchment and cut into bars or squares.
Notes
Store in an airtight container at room temperature for about a week or refrigerate to prevent melting. Can freeze for up to three months.
