Description

Delightful Rocky Road Chocolate Treats combining chocolate, marshmallows, nuts, and coconut for a fun and easy dessert.


Ingredients

  • 8 ounces (1 1/3 cups) dark chocolate melts or chips
  • 8 ounces (1 1/3 cups) milk chocolate melts, chips, or block, chopped
  • 2 tablespoons coconut oil or neutral flavored oil
  • 3 cups pink and white marshmallows, most cut in half
  • 3/4 cup raspberry lollies, halved
  • 1/3 cup unsweetened desiccated coconut
  • 1/2 cup unsalted peanuts, very roughly chopped

Instructions

  1. Line an 8-inch square pan with parchment paper, leaving some overhang for easy removal.
  2. In a heatproof bowl, combine dark and milk chocolate with coconut oil. Microwave in 30-second intervals, stirring until smooth.
  3. Fold in marshmallows, raspberry lollies, desiccated coconut, and peanuts until evenly coated.
  4. Pour the mixture into the prepared pan and spread evenly with a spatula.
  5. Refrigerate for about 3 hours or until completely set.
  6. Remove from refrigerator 30 minutes before cutting. Lift out by the overhanging parchment and cut into bars or squares.

Notes

Store in an airtight container at room temperature for about a week or refrigerate to prevent melting. Can freeze for up to three months.
