Description

Delicious no-bake cookies made with almond butter, honey, and rolled oats, perfect for a quick, sweet treat.


Ingredients

  • 2 tablespoons coconut oil
  • 1/2 cup almond butter
  • 1/2 cup honey
  • 1 1/4 cups rolled oats (old-fashioned or quick oats)

Instructions

  1. Line a 9×13-inch baking dish or sheet pan with parchment paper and set it aside.
  2. In a small saucepan, add the almond butter and coconut oil. Place the pan over low heat and stir frequently until melted and smooth.
  3. Once melted, stir in the honey and rolled oats until everything is evenly combined.
  4. Drop portions of the mixture onto the prepared parchment paper and flatten slightly.
  5. Chill in the refrigerator until firm, about 30 minutes, or in the freezer for about 15 minutes.

Store in an airtight container in a cool, dry place for up to a few days, in the refrigerator for up to one week, or freeze for up to three months.
