Description

Delightful no-bake gingerbread truffles that capture the essence of gingerbread in a bite-sized treat.


Ingredients

  • 1 cup gingerbread cookie crumbs
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1 cup chocolate chips, melted
  • Sprinkles or crushed cookie crumbs for decoration (optional)

Instructions

  1. In a large bowl, combine gingerbread cookie crumbs, cream cheese, powdered sugar, vanilla extract, cinnamon, ginger, and nutmeg. Mix until well combined.
  2. Roll the mixture into small balls (about 1 inch in diameter) and place on a baking sheet lined with parchment paper.
  3. Refrigerate for about 30 minutes to firm up.
  4. Dip each truffle in melted chocolate, then place back on the parchment paper.
  5. Decorate with sprinkles or crushed cookie crumbs if desired.
  6. Chill until the chocolate is set, then enjoy!
