Ingredients

- 1 cup gingerbread cookie crumbs
- 1/2 cup cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1 cup chocolate chips, melted
- Sprinkles or crushed cookie crumbs for decoration (optional)
Instructions
- In a large bowl, combine gingerbread cookie crumbs, cream cheese, powdered sugar, vanilla extract, cinnamon, ginger, and nutmeg. Mix until well combined.
- Roll the mixture into small balls (about 1 inch in diameter) and place on a baking sheet lined with parchment paper.
- Refrigerate for about 30 minutes to firm up.
- Dip each truffle in melted chocolate, then place back on the parchment paper.
- Decorate with sprinkles or crushed cookie crumbs if desired.
- Chill until the chocolate is set, then enjoy!
