Description

Delicious no-bake truffles combining toasted coconut, creamy caramel, and rich chocolate for a sweet treat reminiscent of Samoa cookies.

Ingredients

Scale
  • 2 cups sweetened shredded coconut, toasted
  • 1 cup vanilla wafer crumbs
  • 6 oz soft caramels or thick caramel
  • 4 oz cream cheese, softened
  • 10 oz semi-sweet chocolate, melted

Instructions

  1. In a bowl, mix toasted coconut, vanilla wafer crumbs, caramels, and cream cheese until well combined.
  2. Roll the mixture into small balls and place them on a baking sheet lined with parchment paper.
  3. Freeze the truffles for about 30 minutes to firm up.
  4. Once firm, dip each truffle in melted chocolate and place back on the parchment-lined baking sheet.
  5. Allow the chocolate to set before serving.

Notes

Use quality chocolate for the best flavor. Ensure your cream cheese is softened to avoid lumps.
