- 1 cup vanilla wafer crumbs
- 6 oz soft caramels or thick caramel
- 4 oz cream cheese, softened
- 10 oz semi-sweet chocolate, melted
Instructions
- In a bowl, mix toasted coconut, vanilla wafer crumbs, caramels, and cream cheese until well combined.
- Roll the mixture into small balls and place them on a baking sheet lined with parchment paper.
- Freeze the truffles for about 30 minutes to firm up.
- Once firm, dip each truffle in melted chocolate and place back on the parchment-lined baking sheet.
- Allow the chocolate to set before serving.
