Description

These no-bake coconut cream balls are quick and easy to make, featuring a sweet coconut filling coated in chocolate.


Ingredients

  • 2½ cups shredded coconut
  • 1 cup sweetened condensed milk
  • ½ teaspoon vanilla extract
  • 1 cup powdered sugar
  • ½ cup chopped nuts (optional)
  • 8 ounces chocolate (white, milk, or semi-sweet), melted

Instructions

  1. In a large bowl, combine shredded coconut, sweetened condensed milk, vanilla extract, and powdered sugar. Mix until a thick, sticky dough forms.
  2. Scoop small portions and roll into smooth balls. Place on a parchment-lined baking sheet.
  3. Freeze the coconut balls for 30 minutes until firm.
  4. Melt chocolate in 30-second intervals, stirring between each round until smooth.
  5. Dip each ball into melted chocolate, let excess drip off, then return to parchment paper. Allow to set before serving.

Notes

You can press a nut on top of each ball before the chocolate sets if you like a crunch.
