Ingredients

- 2½ cups shredded coconut
- 1 cup sweetened condensed milk
- ½ teaspoon vanilla extract
- 1 cup powdered sugar
- ½ cup chopped nuts (optional)
- 8 ounces chocolate (white, milk, or semi-sweet), melted
Instructions
- In a mixing bowl, combine shredded coconut, sweetened condensed milk, vanilla extract, and powdered sugar. Mix well until fully combined. If desired, fold in chopped nuts.
- Scoop out small portions of the mixture and roll them into balls.
- Place the balls on a baking sheet lined with parchment paper and freeze for about 30 minutes to set.
- Melt the chocolate in a microwave or over a double boiler.
- Dip each coconut ball into the melted chocolate, ensuring it’s fully coated, and return to the parchment-lined baking sheet.
- Refrigerate until the chocolate is set.
Notes
Use quality chocolate for a better flavor, and feel free to experiment with different extracts and coatings.
