- 1 cup shredded coconut
- 1 cup maple syrup
- 1 teaspoon vanilla or coconut extract (optional)
- 1 tablespoon coconut oil or cocoa butter (optional)
Instructions
- Cook the Maple Syrup: Pour the maple syrup into a small saucepan and attach a candy thermometer. Bring the syrup to a boil over medium heat. Cook it until it reaches 234–236°F, which is known as the soft-ball stage.
- Cool and Thicken: Remove the saucepan from heat and let the syrup sit for about 5 minutes. Beat it with a fork until it thickens slightly and starts to lose its shine.
- Add Coconut: Stir in vanilla or coconut extract if using, then mix in the shredded coconut until fully coated.
- Shape and Set: Drop spoonfuls of the mixture onto parchment paper and allow them to cool at room temperature until fully set.
Notes
Store cookies in an airtight container at room temperature for up to a week. Refrigerate in warm climates to maintain shape and texture.
