- 1 teaspoon vanilla extract

Instructions
- Prepare the Crust: In a bowl, combine graham cracker crumbs and melted butter. Mix well and press into the bottom of mini mason jars.
- Make the Cheesecake Filling: In another bowl, beat the cream cheese until smooth. Add sugar and vanilla extract, mixing until combined.
- Whip the Heavy Cream: In a separate bowl, whip the heavy cream to stiff peaks.
- Combine: Gently fold the whipped cream into the cream cheese mixture.
- Layering: Spoon or pipe the cheesecake filling over the crust in the jars.
- Add the Topping: Top each jar with cherry topping.
- Chill: Refrigerate for at least 2 hours before serving.
