Description

Delicious and creamy No Bake Cheesecake Bites that are easy to prepare and customizable with your favorite toppings.


Ingredients

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup graham cracker crumbs
  • 4 tablespoons unsalted butter, melted
  • Pinch of salt
  • Toppings of your choice (e.g., fruit, chocolate ganache, caramel)

Instructions

  1. Prepare the crust: In a medium bowl, combine graham cracker crumbs, melted butter, and a pinch of salt. Mix until well combined. Press the mixture firmly into the bottom of mini muffin tins or silicone molds to form the crust. Set aside.
  2. Mix the cheesecake filling: In a large bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, and mix until well combined.
  3. Whip the cream: In another bowl, whip the heavy cream until stiff peaks form.
  4. Combine the mixtures: Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  5. Fill the molds: Spoon or pipe the cheesecake filling into the prepared crust in each muffin tin or mold. Smooth the tops with a spatula.
  6. Chill: Place the filled molds in the refrigerator for at least 120 to 240 minutes or until they are fully set.
  7. Serve and enjoy: Once set, carefully pop the cheesecake bites out of the molds and top with your choice of toppings.

Notes

Use softened cream cheese for easy mixing and don’t overmix the whipped cream to keep the filling light.
