- 2 cups fresh blueberries
- 1/4 cup chia seeds
- 1/4 cup honey or maple syrup
- 1 cup almond milk
- 1 teaspoon vanilla extract
- 1 1/2 cups graham cracker crumbs
- 1/2 cup melted butter or coconut oil
Instructions
- Prepare the Chia Seed Mixture: In a bowl, combine the fresh blueberries, chia seeds, honey (or maple syrup), almond milk, and vanilla extract. Mix well and let it sit for about 15-20 minutes until it thickens.
- Make the Crust: In another bowl, mix the graham cracker crumbs with melted butter until combined. Press the mixture into the bottom of a pie dish to form the crust.
- Combine and Layer: Once the chia seed mixture has thickened, pour it into the prepared crust, spreading it evenly.
- Chill the Pie: Refrigerate the pie for at least 2 hours or until set.
- Serve: Serve chilled, topped with additional blueberries if desired.
Notes
Fresh blueberries taste better than frozen ones. Adjust sweetness based on preference.
