Ingredients

Instructions

  1. Prepare the Chia Seed Mixture: In a bowl, combine the fresh blueberries, chia seeds, honey (or maple syrup), almond milk, and vanilla extract. Mix well and let it sit for about 15-20 minutes until it thickens.
  2. Make the Crust: In another bowl, mix the graham cracker crumbs with melted butter until combined. Press the mixture into the bottom of a pie dish to form the crust.
  3. Combine and Layer: Once the chia seed mixture has thickened, pour it into the prepared crust, spreading it evenly.
  4. Chill the Pie: Refrigerate the pie for at least 2 hours or until set.
