Ingredients

- 2 cups of your favorite pasta (spaghetti, penne, or fusilli)
- 1 cup of diced tomatoes (fresh or canned)
- 3 cloves of garlic, minced
- 1 medium onion, chopped
- 1 bell pepper, diced
- 2 cups of cooked chicken or any protein of your choice
- 1 tablespoon of olive oil
- 1 teaspoon of dried oregano
- 1 teaspoon of dried basil
- Salt and pepper to taste
- Grated cheese for topping (optional)
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, boil water and add a pinch of salt. Add the pasta and cook according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper. Sauté for about 5 minutes until they become soft. Add the minced garlic and cook for another minute.
- Stir in your cooked chicken or protein of choice. Mix well with the sautéed vegetables.
- Add the diced tomatoes, oregano, basil, salt, and pepper. Stir everything together and let it simmer for about 10 minutes.
- Add the cooked pasta to the skillet. Mix gently until everything is well-coated and heated through.
- Portion the pasta into bowls. If desired, sprinkle grated cheese on top and garnish with fresh parsley.
