Description

A hearty Italian lasagna made with layers of mushrooms, spinach, and creamy cheese, perfect for vegetarians and meat-lovers alike.


Ingredients

  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 5 ounces fresh spinach
  • 15 ounces ricotta cheese
  • 1 egg
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. Heat olive oil over medium heat in a skillet. Add chopped onion and minced garlic, and sauté until translucent.
  4. Add sliced mushrooms to the skillet and cook until softened. Mix in fresh spinach and cook until wilted. Season with salt and pepper.
  5. Combine ricotta cheese, egg, and half of the shredded mozzarella cheese in a separate bowl. Mix until smooth.
  6. Spread a thin layer of marinara sauce at the bottom of a baking dish.
  7. Layer 3 lasagna noodles on top, then add half of the ricotta mixture, followed by half of the mushroom and spinach mixture. Add another layer of marinara sauce and sprinkle Parmesan cheese.
  8. Repeat layering with another 3 noodles, remaining ricotta mixture, rest of the mushroom and spinach filling, more marinara, and more Parmesan cheese.
  9. Top with remaining noodles, cover with marinara sauce, and sprinkle remaining mozzarella and Parmesan cheese.
  10. Cover the baking dish with aluminum foil and bake for 25 minutes.
  11. Remove the foil and bake for an additional 15 minutes until cheese is bubbly and golden brown.
  12. Let cool for a few minutes, garnish with fresh basil if desired, and serve warm.

Notes

Make sure to not overcook the noodles and always include a sauce layer to prevent sticking.
