Mujadara is a traditional Middle Eastern dish made with lentils and rice, topped with caramelized onions, offering a hearty and nutritious meal.

- 1 cup lentils
- 1 cup rice
- 4 cups water or vegetable broth
- 2 large onions, thinly sliced
- 3 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon coriander
- Salt and pepper to taste
- Fresh herbs for garnish (parsley or cilantro)
Instructions
- Rinse the lentils and soak for about 30 minutes if desired. Drain.
- Bring the water or broth to a boil in a large pot and add the lentils. Simmer until lentils are tender, about 15-20 minutes.
- Cook the rice according to package instructions in a separate pot.
- Heat olive oil over medium heat in a skillet. Add the sliced onions and cook until deep golden brown and caramelized, about 15-20 minutes.
- Once the lentils are cooked, add the rice to the lentils and mix well. Stir in cumin, coriander, salt, and pepper.
- Serve the lentil and rice mixture topped with caramelized onions and fresh herbs.
Notes
Caramelizing onions takes time, so avoid rushing. Store leftovers in an airtight container for 3-5 days in the refrigerator or freeze for up to three months.
