- 1 lb ground beef (80/20)
- 1 lb ground pork
- 1 cup low moisture mozzarella (cubed)
- 1 egg
- 3/4 cup breadcrumbs
- 1/2 cup grated parmesan
- 1 tbsp Italian seasoning
- 2 tbsp chopped fresh parsley
- 3 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- Optional: 2 tbsp milk (if mixture is too dry)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine ground beef, ground pork, breadcrumbs, parmesan cheese, garlic, parsley, egg, Italian seasoning, salt, and pepper. Mix gently until just combined.
- Scoop about 2 tablespoons of the mixture, flatten it in your hand, place a cube of mozzarella in the center, and fold the meat around the cheese. Ensure the cheese is fully enclosed.
- Place the meatballs on the prepared baking sheet and bake for 20-25 minutes or until golden brown and cooked through.
- (Optional) Simmer meatballs in marinara sauce for 5-10 minutes for extra flavor.
- Serve hot, with pasta, in sub sandwiches, or as appetizers with dipping sauces.
Notes
Ensure mozzarella is completely covered to prevent leaking while baking. Use a meat thermometer to check doneness, aiming for an internal temperature of 160°F.
