- 4 boneless chicken breasts
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 cup mushrooms, sliced
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup Parmesan cheese, grated
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Season chicken breasts with salt and pepper and add to the skillet. Cook until golden brown on both sides, about 6-7 minutes per side.
- Remove chicken from skillet and set aside.
- In the same skillet, add garlic and mushrooms; sauté for 2-3 minutes until mushrooms are soft.
- Stir in sun-dried tomatoes and cook for an additional minute.
- Pour in chicken broth and bring to a simmer.
- Add heavy cream and Parmesan cheese, stirring until the sauce is smooth.
- Return chicken to the skillet and coat in the sauce.
- Simmer for 5 more minutes until chicken is cooked through.
- Serve warm and enjoy!
Notes
For the best flavor, don’t rush the browning of the chicken. You can customize by adding ingredients like spinach or using different cheeses.
