- 1 teaspoon baking soda

- 1/4 cup unsalted butter, softened
- 1/2 cup sugar
- 1/2 cup molasses
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract (for frosting)
Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together the flour, baking soda, salt, ginger, cinnamon, and cloves until well mixed.
- Beat together the softened butter and sugar until fluffy and light in color.
- Add the molasses, large egg, and 1 teaspoon of vanilla extract to the butter mixture and mix until everything is combined.
- Gradually add the dry ingredients from the first bowl to the wet mixture. Mix gently until just combined.
- Drop portions of the cookie dough onto a baking sheet lined with parchment paper using a tablespoon.
- Bake in the preheated oven for about 10-12 minutes or until the edges are set.
- Allow the cookies to cool completely on a wire rack.
- Prepare the frosting by mixing the powdered sugar, heavy cream, and 1 teaspoon of vanilla extract in a separate bowl.
- Spread some frosting on one cookie and sandwich it with another cookie. Enjoy!
