Description

Ingredients

  • 2 ripe bananas, mashed
  • 1 cup fresh strawberries, chopped
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two loaf pans.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the mashed bananas, eggs, and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
  5. Gently fold in the chopped strawberries.
  6. Divide the batter evenly between the two prepared loaf pans.
  7. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the loaves to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

Notes

Using very ripe bananas will give the loaf the best flavor and moisture. Avoid overmixing the batter to prevent a dense loaf.
