Description
A delightful mix of ripe bananas and fresh strawberries creates a moist and flavorful loaf perfect for breakfast, snacks, or dessert.
Ingredients
Scale
- 2 ripe bananas, mashed
- 1 cup fresh strawberries, chopped
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C). Grease two loaf pans.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Add the mashed bananas, eggs, and vanilla extract, mixing until well combined.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
- Gently fold in the chopped strawberries.
- Divide the batter evenly between the two prepared loaf pans.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the loaves to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
Notes
Using very ripe bananas will give the loaf the best flavor and moisture. Avoid overmixing the batter to prevent a dense loaf.
