Description

A rich and fluffy chocolate layer cake filled with creamy peanut butter and topped with silky chocolate ganache.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup creamy peanut butter
  • 1 cup heavy cream
  • 8 ounces semisweet chocolate, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour three 9-inch round cake pans.
  2. Mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well blended.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients and mix until smooth.
  4. Carefully stir in the boiling water. The batter will be thin.
  5. Pour the batter into the prepared cake pans and bake for 30-35 minutes.
  6. Cool the cakes in the pans for about 10 minutes, then transfer to wire racks to cool completely.
  7. Beat the creamy peanut butter and heavy cream until light and fluffy for the filling.
  8. Spread the filling between the layers of cake.
  9. Heat the heavy cream in a saucepan until simmering, then pour over the chopped chocolate and stir until smooth to make ganache.
  10. Pour the ganache over the top of the cake, allowing it to drip down the sides.
  11. Slice and enjoy!

Notes

For the best flavor, serve with coffee or a scoop of vanilla ice cream.
