- 3 ripe bananas
- 1/2 cup butter, melted
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups all-purpose flour
- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon lemon juice
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- Mash the ripe bananas in a mixing bowl until smooth.
- Add the melted butter, sugar, eggs, and vanilla extract; mix until combined.
- In another bowl, whisk together the baking soda, salt, and flour. Gradually mix this into the banana mixture until just combined.
- In a separate bowl, combine the softened cream cheese, powdered sugar, and lemon juice until smooth.
- Pour half of the banana batter into the prepared loaf pan.
- Spread the cream cheese mixture over the batter, then top with the remaining banana batter.
- Use a knife to swirl the two mixtures together.
- Bake for 60-70 minutes or until a toothpick comes out clean.
- Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack.
Notes
Ensure bananas are very ripe for the best flavor. Avoid overmixing to keep the loaf tender.
