Ingredients

  • 1/2 cup butter, melted
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Mash the ripe bananas in a mixing bowl until smooth.
  3. Add the melted butter, sugar, eggs, and vanilla extract; mix until combined.
  4. In another bowl, whisk together the baking soda, salt, and flour. Gradually mix this into the banana mixture until just combined.
  5. In a separate bowl, combine the softened cream cheese, powdered sugar, and lemon juice until smooth.
  6. Pour half of the banana batter into the prepared loaf pan.
  7. Spread the cream cheese mixture over the batter, then top with the remaining banana batter.
  8. Use a knife to swirl the two mixtures together.
  9. Bake for 60-70 minutes or until a toothpick comes out clean.
  10. Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack.
