Description

Mississippi Mud Cake is a rich, gooey chocolate cake topped with marshmallows, ganache, and pecans, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups mini marshmallows
  • 1 cup chocolate ganache (made from chocolate and heavy cream)
  • 1 cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add to the wet mixture until just combined.
  5. Pour the batter into the prepared baking pan and bake for about 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Once out of the oven, immediately sprinkle the mini marshmallows on top and return to the oven for an additional 5-7 minutes, until the marshmallows are puffy.
  7. Remove from oven and let cool slightly. Spread the chocolate ganache over the marshmallows and sprinkle with chopped pecans.
  8. Allow to cool completely before cutting into squares. Serve and enjoy!

Notes

For a nut-free version, skip the pecans and add extra chocolate chips. For a gluten-free option, use a gluten-free flour blend.
