Description

Ingredients

  • 1 teaspoon baking soda
  • Pinch of salt
  • 2 sticks butter, softened
  • ¼ cup granulated sugar
  • ¾ cup brown sugar
  • 2 eggs
  • 1 small package white chocolate instant pudding mix
  • ½ teaspoon peppermint oil or 1 teaspoon mint extract
  • 4–5 drops green food coloring
  • Chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, and salt.
  3. In another bowl, cream the softened butter, granulated sugar, and brown sugar until smooth.
  4. Beat in the eggs, pudding mix, peppermint oil (or mint extract), and food coloring until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips.
  7. Drop tablespoon-sized amounts of dough onto baking sheets lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are golden.
  9. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

Chill the dough for 30 minutes for better shaping, and don’t overmix to keep cookies soft.
