Description

Deliciously minty cookies loaded with chocolate chips, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mint chocolate chips
  • 1/2 teaspoon peppermint extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla and peppermint extracts.
  4. Combine the flour, baking soda, and salt in another bowl. Gradually add this dry mixture to the creamed mixture.
  5. Fold in the mint chocolate chips.
  6. Drop by rounded tablespoons onto ungreased cookie sheets.
  7. Bake for 9 to 11 minutes or until the edges are light golden brown.
  8. Allow cookies to cool on the sheets for a few minutes before transferring to wire racks to cool completely.
