Description

Ingredients

  • 1 cup butter
  • 2 cups sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup powdered sugar
  • 1/4 cup butter (for frosting)
  • 2 tablespoons milk
  • 1/2 teaspoon peppermint extract
  • Green food coloring (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. In a large bowl, melt 1 cup of butter. Mix in 2 cups of sugar until well combined.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, combine the flour, cocoa powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients until fully combined.
  6. Fold in the chocolate chips.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow to cool completely.
  10. In a separate bowl, beat together the frosting ingredients: 1/4 cup butter, powdered sugar, milk, peppermint extract, and green food coloring (if using) until smooth.
  11. Spread the mint frosting over the cooled brownies.
  12. Cut into squares and serve.

Notes

Do not overmix the batter to avoid dense brownies. Use good-quality chocolate for the best flavor.
