- 2 cups sugar
- 4 large eggs
- 1 teaspoon vanilla extract

- 1 cup cocoa powder
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1 cup powdered sugar
- 1/4 cup butter (for frosting)
- 2 tablespoons milk
- 1/2 teaspoon peppermint extract
- Green food coloring (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan.
- In a large bowl, melt 1 cup of butter. Mix in 2 cups of sugar until well combined.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, combine the flour, cocoa powder, and salt.
- Gradually add the dry ingredients to the wet ingredients until fully combined.
- Fold in the chocolate chips.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool completely.
- In a separate bowl, beat together the frosting ingredients: 1/4 cup butter, powdered sugar, milk, peppermint extract, and green food coloring (if using) until smooth.
- Spread the mint frosting over the cooled brownies.
- Cut into squares and serve.
Notes
Do not overmix the batter to avoid dense brownies. Use good-quality chocolate for the best flavor.
