Description

Mini Loaded Baked Potatoes are a fun and delicious snack or side dish, perfectly roasted and topped with cheese, sour cream, beef bits, and chives.


Ingredients

  • 11.5 Pounds Baby Potatoes
  • 2 Tablespoons Olive Oil
  • Salt (to taste)
  • 1/2 Cup Cheddar Cheese, hand shredded
  • 1/4 Cup Sour Cream
  • 1/4 Cup Beef Bits
  • 1 Tablespoon Chives

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the baby potatoes thoroughly and cut them in half lengthwise. Toss with olive oil and salt.
  3. Spread potatoes on a parchment-lined baking sheet and roast for 20-25 minutes until fork-tender and golden brown.
  4. Sprinkle shredded Cheddar cheese over each potato half.
  5. Return to oven for an additional 3-5 minutes to melt the cheese.
  6. Top each potato half with a dollop of sour cream.
  7. Sprinkle beef bits and garnish with fresh chives.
  8. Serve immediately and enjoy warm.
