Mini Loaded Baked Potatoes are a fun and delicious snack or side dish, perfectly roasted and topped with cheese, sour cream, beef bits, and chives.

- 1–1.5 Pounds Baby Potatoes
- 2 Tablespoons Olive Oil
- Salt (to taste)
- 1/2 Cup Cheddar Cheese, hand shredded
- 1/4 Cup Sour Cream
- 1/4 Cup Beef Bits
- 1 Tablespoon Chives
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the baby potatoes thoroughly and cut them in half lengthwise. Toss with olive oil and salt.
- Spread potatoes on a parchment-lined baking sheet and roast for 20-25 minutes until fork-tender and golden brown.
- Sprinkle shredded Cheddar cheese over each potato half.
- Return to oven for an additional 3-5 minutes to melt the cheese.
- Top each potato half with a dollop of sour cream.
- Sprinkle beef bits and garnish with fresh chives.
- Serve immediately and enjoy warm.
