Delicious bite-sized mini cheeseburgers perfect for parties, game days, or casual family dinners.

- 12 mini burger buns
- 1 pound ground beef (80/20)
- 6 slices cheddar cheese (each cut in half to make 12 pieces)
- 3 large leaves lettuce (torn into 12 small pieces)
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 2 tablespoons mayonnaise
- 2 tablespoons ketchup
- 2 tablespoons butter (melted, for buns)
- 1 tablespoon vegetable oil (for cooking patties)
- Sesame seeds (optional, for topping buns)
Instructions
- Slice all 12 mini buns in half. Brush the tops with melted butter and sprinkle with sesame seeds if desired. Toast the buns, cut side down, in a skillet or under a broiler until golden brown. Set aside.
- Divide ground beef into 12 equal portions (about 1.3 ounces each). Roll each portion into a ball, then flatten into patties just wider than the buns. Season both sides with kosher salt and black pepper.
- Heat vegetable oil in a large skillet over medium-high heat. Add the patties in batches and cook for 2–3 minutes per side until browned and cooked through.
- In the last minute of cooking, top each patty with a slice of cheddar cheese. Cover the pan to help the cheese melt nicely.
- Spread about 1/2 teaspoon each of mayonnaise and ketchup on the bottom of each toasted bun. Place a piece of lettuce onto the bun, then add a cheeseburger patty. Cap each burger with the top bun and secure with a toothpick.
