Description

Delicious bite-sized mini cheeseburgers perfect for parties, game days, or casual family dinners.


Ingredients

  • 12 mini burger buns
  • 1 pound ground beef (80/20)
  • 6 slices cheddar cheese (each cut in half to make 12 pieces)
  • 3 large leaves lettuce (torn into 12 small pieces)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons mayonnaise
  • 2 tablespoons ketchup
  • 2 tablespoons butter (melted, for buns)
  • 1 tablespoon vegetable oil (for cooking patties)
  • Sesame seeds (optional, for topping buns)

Instructions

  1. Slice all 12 mini buns in half. Brush the tops with melted butter and sprinkle with sesame seeds if desired. Toast the buns, cut side down, in a skillet or under a broiler until golden brown. Set aside.
  2. Divide ground beef into 12 equal portions (about 1.3 ounces each). Roll each portion into a ball, then flatten into patties just wider than the buns. Season both sides with kosher salt and black pepper.
  3. Heat vegetable oil in a large skillet over medium-high heat. Add the patties in batches and cook for 2–3 minutes per side until browned and cooked through.
  4. In the last minute of cooking, top each patty with a slice of cheddar cheese. Cover the pan to help the cheese melt nicely.
  5. Spread about 1/2 teaspoon each of mayonnaise and ketchup on the bottom of each toasted bun. Place a piece of lettuce onto the bun, then add a cheeseburger patty. Cap each burger with the top bun and secure with a toothpick.
