- 1/2 cup sugar
- 1 teaspoon baking powder

- 1 cup heavy cream
- 1/4 cup powdered sugar
- 4 tablespoons sugar (for caramelizing)
Instructions
- Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
- Combine in a mixing bowl the all-purpose flour, sugar, baking powder, and salt.
- Whisk together in another bowl the milk, melted butter, egg, and vanilla extract until well mixed.
- Pour the wet ingredients into the dry ingredients and combine until just mixed. Be careful not to overmix.
- Fold in the blueberries gently, ensuring they are evenly distributed throughout the batter.
- Fill each muffin cup about three-quarters full with the batter and bake in the oven for 12-15 minutes or until a toothpick comes out clean.
- Let the donut cups cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
- Whip the heavy cream along with powdered sugar in a chilled bowl until soft peaks form. This should take a few minutes.
- Fill each donut cup with the blueberry vanilla cream generously.
- Sprinkle a thin layer of sugar on top of each filled donut cup and caramelize using a kitchen torch until it forms a golden crispy top.
- Serve immediately and enjoy the delightful caramelized topping!

For best results, chill the bowl for whipping cream and avoid overmixing the batter.
