Description
Festive spiced cookies shaped like pumpkins, filled with melty milk chocolate, and dusted with cinnamon sugar for the perfect Halloween treat.
Ingredients
1 ½ cups salted butter, softened
1 ¼ cups light brown sugar
1 tbsp vanilla extract
2 large eggs
4 ½ cups all-purpose flour
1 tsp baking soda
1 tsp cinnamon
½ tsp ginger
¼ tsp nutmeg
½ tsp salt
12 oz milk chocolate, melted
Cinnamon sugar for dusting
Instructions
1. Cream butter, sugar, and vanilla until fluffy. Add eggs one at a time.
2. Mix dry ingredients separately, then combine to form dough.
3. Roll dough ¼ inch thick, cut pumpkin shapes. Carve faces on half.
4. Chill cookies 15 minutes.
5. Bake at 350°F for 8–12 minutes. Cool on rack.
6. Spread melted chocolate on plain pumpkins. Top with jack-o-lantern faces.
7. Optional: Brush tops with browned butter, sprinkle with cinnamon sugar.
Notes
Chill cookies before baking to hold shape.
Store in airtight container for up to 3 days.
Freeze unassembled cookies for up to 2 months.
Try dark chocolate or white chocolate fillings for variations.
