Description

A comforting casserole that combines seasoned beef, black beans, corn, and crispy tater tots, perfect for family dinners.


Ingredients

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 2 cups tater tots
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 packet taco seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the ground beef in a skillet over medium heat until browned, then drain excess fat.
  3. Add the black beans, corn, and taco seasoning to the beef, stirring well to combine; let it cook for about 5 minutes.
  4. Spread the beef mixture evenly in the bottom of a casserole dish.
  5. Layer the tater tots on top of the beef mixture.
  6. Sprinkle the shredded cheese evenly over the tater tots.
  7. Bake in the preheated oven for 25-30 minutes, until the tater tots are golden brown and crispy.
  8. Let cool for a few minutes before serving.

Notes

Serve with a fresh salad, guacamole and chips, or sour cream for added flavor.
