A comforting casserole that combines seasoned beef, black beans, corn, and crispy tater tots, perfect for family dinners.

- 1 lb ground beef
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 2 cups tater tots
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 packet taco seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the ground beef in a skillet over medium heat until browned, then drain excess fat.
- Add the black beans, corn, and taco seasoning to the beef, stirring well to combine; let it cook for about 5 minutes.
- Spread the beef mixture evenly in the bottom of a casserole dish.
- Layer the tater tots on top of the beef mixture.
- Sprinkle the shredded cheese evenly over the tater tots.
- Bake in the preheated oven for 25-30 minutes, until the tater tots are golden brown and crispy.
- Let cool for a few minutes before serving.
Notes
Serve with a fresh salad, guacamole and chips, or sour cream for added flavor.
