- 1 pound rotini pasta
- 2 cups corn (fresh or canned)
- 1 cup cotija cheese, crumbled
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon lime juice
- 2 tablespoons chopped cilantro
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Start by boiling water in a large pot. Add the rotini pasta and cook according to package instructions, about 8-10 minutes. Drain and let cool.
- In a large bowl, combine the cooled rotini, corn, and cotija cheese.
- In a separate bowl, whisk together mayonnaise, sour cream, lime juice, cilantro, chili powder, salt, and pepper.
- Pour the dressing over the pasta mixture and gently toss to coat.
- Cover the bowl with plastic wrap and chill in the refrigerator for at least 30 minutes before serving.
