Ingredients

  • 1 pound rotini pasta
  • 2 cups corn (fresh or canned)
  • 1 cup cotija cheese, crumbled
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • 2 tablespoons chopped cilantro
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Start by boiling water in a large pot. Add the rotini pasta and cook according to package instructions, about 8-10 minutes. Drain and let cool.
  2. In a large bowl, combine the cooled rotini, corn, and cotija cheese.
