Ingredients

  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 teaspoon garlic powder
  • 1 lime, juiced
  • 1/3 cup crumbled cotija cheese
  • 1 tablespoon chili powder
  • 2 tablespoons chopped cilantro
  • Lime wedges, for serving

Instructions

  1. Preheat your grill to medium-high heat.
  2. Place the husked corn directly on the grates and rotate every 2 minutes until all sides are lightly charred, about 8 minutes total.
  3. In a small bowl, whisk together the mayonnaise, sour cream, garlic powder, and lime juice until smooth.
  4. Using a spoon or brush, slather each grilled ear of corn with the creamy mixture while it’s still warm so it soaks into the kernels.
  5. Sprinkle crumbled cotija cheese generously over the coated corn. Then dust with chili powder and a handful of fresh cilantro.
  6. Serve immediately with lime wedges on the side.
