Description

Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 can diced tomatoes
  • 1 can enchilada sauce
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheese (optional)
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the quinoa under cold water and combine it with vegetable broth in a pot. Bring it to a boil, then reduce the heat and let it simmer for about 15 minutes until the quinoa is fluffy.
  3. Mix the cooked quinoa, black beans, corn, diced tomatoes, enchilada sauce, cumin, and chili powder in a large bowl.
  4. Pour this mixture into a greased baking dish and sprinkle cheese on top if you desire.
  5. Bake for 25-30 minutes until everything is heated through and the cheese is melted.
  6. Garnish with fresh cilantro before serving.
