Description

A creamy and cheesy dip made with charred corn, cream cheese, and fresh veggies. Perfect for parties and gatherings.


Ingredients

  • 2 cups charred corn (fresh or canned)
  • 1 cup cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup diced red onion
  • 1/2 cup diced bell pepper
  • 12 jalapeños, diced (optional for spice)
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Chips or veggies for serving

Instructions

  1. In a large mixing bowl, combine softened cream cheese, sour cream, and melted cheese. Mix until smooth.
  2. Add in charred corn, diced onion, bell pepper, jalapeños, lime juice, chili powder, cumin, salt, and pepper. Stir until well combined.
  3. Transfer the mixture to a baking dish and bake at 350°F (175°C) for 20-25 minutes or until bubbly and hot.
  4. Serve warm with chips or fresh veggies.

Notes

This dip can be stored in an airtight container in the refrigerator for 3-5 days. Reheat in the oven or microwave before serving.
