- 2 cups charred corn (fresh or canned)
- 1 cup cream cheese, softened
- 1 cup sour cream
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup diced red onion
- 1/2 cup diced bell pepper
- 1–2 jalapeños, diced (optional for spice)
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Chips or veggies for serving
Instructions
- In a large mixing bowl, combine softened cream cheese, sour cream, and melted cheese. Mix until smooth.
- Add in charred corn, diced onion, bell pepper, jalapeños, lime juice, chili powder, cumin, salt, and pepper. Stir until well combined.
- Transfer the mixture to a baking dish and bake at 350°F (175°C) for 20-25 minutes or until bubbly and hot.
- Serve warm with chips or fresh veggies.
Notes
This dip can be stored in an airtight container in the refrigerator for 3-5 days. Reheat in the oven or microwave before serving.
