Description

Crispy, cheesy, and herby—these Mediterranean spinach and feta cheese crisps are the perfect baked or air-fried snack for healthy, low-carb cravings.


Ingredients

Scale

1 cup fresh spinach, finely chopped

½ cup crumbled feta cheese

2 tbsp grated parmesan (optional)

1 tbsp olive oil

¼ tsp garlic powder

¼ tsp dried oregano

Salt and pepper to taste

Optional: 1 egg white for binding

Optional: sesame seeds or red pepper flakes for topping


Instructions

1. Preheat oven to 375°F or air fryer to 350°F. Line a baking tray with parchment.

2. In a bowl, mix spinach, feta, parmesan (if using), olive oil, garlic powder, oregano, salt, and pepper.

3. Add egg white if desired for structure.

4. Scoop 1 tbsp portions onto tray and flatten slightly.

5. Bake for 14–17 minutes or air fry 8–10 minutes, until golden and crisp.

6. Cool for 5 minutes to allow crisps to set.

7. Serve immediately or store in an airtight container.

Notes

Use frozen spinach only if fully drained and chopped.

Add lemon zest or sundried tomatoes for variation.

Re-crisp leftovers in oven or air fryer for 3–5 minutes.
