Ingredients

  • 2 large sweet potatoes
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes. In a bowl, toss them with olive oil, dried oregano, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet in a single layer and roast them for 25-30 minutes, or until they are tender and caramelized.
  4. In a large mixing bowl, combine the roasted sweet potatoes, chickpeas, cherry tomatoes, and Kalamata olives.
  5. Gently fold in the crumbled feta cheese.
  6. Garnish with fresh parsley before serving.
