- 2 large sweet potatoes
- 1 can (15 oz) chickpeas, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and halved
- 1/2 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cube the sweet potatoes. In a bowl, toss them with olive oil, dried oregano, salt, and pepper.
- Spread the sweet potatoes on a baking sheet in a single layer and roast them for 25-30 minutes, or until they are tender and caramelized.
- In a large mixing bowl, combine the roasted sweet potatoes, chickpeas, cherry tomatoes, and Kalamata olives.
- Gently fold in the crumbled feta cheese.
- Garnish with fresh parsley before serving.
